After checking that the heat was just right, Brother Ma found the seasonings they bought from the barbecue store, cumin, and such, along with a survival knife, and the type of transparent plastic gloves used for eating lobsters. Armed with these, he got to work.

Taking the lamb off the rack, he skillfully used the survival knife to cut at key spots, breaking through the crispy outer shell to reveal the succulent, juicy, and aromatic lamb inside.

Sprinkling cumin and chili powder and other seasonings elevated the aroma to another level. After a simple finishing touch, Brother Ma divided the lamb into manageable pieces, filling two metal trays to the brim.

"Whole roasted lamb is ready, everyone find your seats, open the drinks, I’ll finish up the last dish, and we can start!" Brother Ma called out, heading towards the pot of stewing ribs.
